This simple salad  has become one of my favorite simple salad recipes to make these days.

I can’t seem to get enough since first making it at The Conscious Gourmet Cooking Retreat I attended in Sedona with my sister last month.

All of the food was delicious, but this was a revelation — how can something so simple be so good?

With just three ingredients — romaine, dill, and scallions — and a simple vinaigrette, it’s definitely one of the best simple salads I’ve ever tasted so I find myself turning to it regularly.

Fortunately, the rest of the family likes it as much as I do.

It’s full of fresh dill, so if you don’t like dill, you’ll want to skip it or replace it with other fresh herbs of your choice.

I think mint and basil would be nice.

Shredded Romaine and Dill Salad Recipe

Simple Shredded Romaine Salad


Prep Time: 15 minutes
Cook Time: N/A
Yield: 4 to 6 servings

Ingredients

5-6 cups shredded romaine lettuce
3/4 cup chopped dill
1/2 cup thinly sliced scallions
Salt and freshly ground pepper
1 large clove garlic, minced
2 tablespoons lemon juice
1-2 teaspoons maple syrup or honey (optional)
1/4 cup olive oil

Preparation

In a large bowl mix the romaine, dill, and scallions. Sprinkle liberally with salt and pepper. In a small bowl or jar with a lid, combine garlic, lemon juice, and sweetener. Whisk or shake to combine. Add dressing to the greens and toss.
