2cupspeeled and cubed butternut squash (frozen is okay)
3cups(2 cans, 15 oz. each) cooked black eyed peas, drained and rinsed
2cupschopped greens (spinach, chard, collards or kale)
2links(6 ounces) smoked chicken or turkey sausage, cubed
4cupschicken or vegetable broth
1can(14 ounces) diced tomatoes
1heaping teaspoon chili powder
1teaspoonsmoked paprika
1/2teaspoonthyme
Salt and pepper to taste
1/4cupchopped parsley (optional)
Instructions
Ideal slow cooker size 6-Quart.
Combine all ingredients in slow cooker.
Cover and cook on HIGH for 3 to 4 hours, or on LOW for 5 to 6 hours.
Stir and adjust seasonings (adding salt and pepper to taste) before serving.
Add fresh chopped parsley, if desired
