Hearty and filling, these cheesy Tex Mex Eggs with fresh salsa can be ready in less than 10 minutes - making a great breakfast, brunch or anytime microwave meal!
1tablespoonpickled jalapeño slices, chopped (or chopped green chiles)
2tablespoonssalsa
Chopped fresh cilantro, if desired
Instructions
Spray a large microwavable mug with nonstick cooking spray. Pour in the liquid egg, onion powder, garlic powder and cumin. Mix together well using a fork.
Microwave on HIGH for 1 minute.
Add 2 tablespoons cheese, black beans and jalapeños or chopped green chiles (if using) and stir to combine.
Microwave on HIGH for 1 minute, or until eggs are set. If additional time is needed, cook in small increments (15 or 30 seconds) until done.
Top with remaining 1 tablespoons cheese, salsa and chopped cilantro (if desired). Enjoy directly from the mug or remove to a small plate.
