1teaspoonsherry vinegar (or your favorite vinegar)
2teaspoonssunflower seeds (toasted and salted)
1tablespoongrated Parmesan cheese
Instructions
Place the arugula in a large bowl. Add a pinch of salt.
Drizzle on the vinegar and oil.
Add 1 teaspoon of the sunflower seeds and toss to combine.
Add in the Parmesan cheese and toss again.
Sprinkle on the remaining seeds. Enjoy immediately.
