This low carb tuna spread mixes chunk light tuna with Laughing Cow Cheese, lemon juice, chopped cucumber and fresh dill - making the perfect topper for cucumber slices or your favorite cracker.
1can(5 ounces) light tuna packed in water, drained and flaked
3wedgesLaughing Cow Cheese (I used Garlic and Herb)
1/3cupfinely chopped English (or Persian) cucumber
1-2tablespoonsfresh lemon juice
1-2tablespoonsminced fresh dill
Salt and pepper, to taste
Instructions
In a medium mixing bowl, combine all ingredients and mix well.
Spread on whole grain crackers, fresh vegetables or as a sandwich filling.
