Positon a rack in the center of the oven and preheat the oven to 400F degrees. Grease a 9 x 5-inch loaf pan well.
In a large bowl, whisk together the flours, salt and baking soda until well blended.
In another bowl, stir together the egg, oil, honey and buttermilk until well combined.
Make a well in the center of the dry ingredients and pour in the milk mixture. Mix well and add more buttermilk if necessary, to create a soft and slightly sloppy mixture.
Pour into the greased pan.
Sprinkle some sunflower or sesame seeds on top, if desired.
Bake in the center of the oven for 1 hour or until the bread is browned and crusty and sounds hollow when tapped on the bottom.
Remove from the oven and cool on a wire rack. (For a softer crust, wrap in a clean dish towel before placing on the wire rack to cool.)
