In a medium sauce pan, whisk together 1 cup apple juice, apple cider vinegar and honey. Over medium heat, bring to a simmer.
Meanwhile, add the remaining 1/2 cup apple juice to a mixing bowl and sprinkle the gelatin over the top. Let stand for 2 minutes to bloom. (Blooming allows the gelatin granules to evenly absorb the liquid, so when later dissolved in hot liquid ensures it sets evenly without any lumps.)
Gradually pour the hot liquid into the gelatin mixture, while continuously whisking until the gelatin is completely dissolved.
Pour whisked mixture into 8x8-inch pan and refrigerate for at least 2 hours, or until set.
Remove pan from refrigerator and cut into 24 blocks.
Store any remaining jello in an airtight container in the refrigerator.
