Ingredients
¾cuppumpkin puree (not pumpkin pie filling)
½cupnonfat plain Greek yogurt
½cuplight whipped topping (I used TruWhip)
2packets0 calorie sweetener (I used Truvia)
1teaspoonpure vanilla extract
¾teaspoonground cinnamon
¼teaspoonpumpkin pie spice
Pinchof salt
1-2cinnamon graham crackers
Instructions
In a medium mixing bowl, stir together the pumpkin puree, yogurt, light whipped topping, sweetener, vanilla, cinnamon, pumpkin pie spice and salt until thoroughly combined.
Divide the mixture evenly between two glasses, layering the pumpkin yogurt mixture with a layer or two of crushed graham crackers, to make parfaits. Top with any remaining graham cracker pieces.
Recipe Notes
I'm using McCormick's Pumpkin Pie Spice which consists of cinnamon, ginger, nutmeg and allspice.As an alternative to cinnamon graham crackers, trying layering your parfaits with ¼-cup cinnamon or pumpkin pie granola.
