This Copycat Taco Bell Pizza recipe is a delicious and healthier alternative with less than half the calories of the fast food original. Keep it vegetarian with fat-free refried beans and cheese or upgrade by adding your favorite precooked meat of choice.
Shredded lettuce, chopped cilantro, avocado slices, sliced black olives, guacamole, light sour cream, etc.
Instructions
Spray a large skillet with non-stick cooking spray and heat over medium-high heat. Add both tortillas and cook just until they begin to turn golden brown, about 3 - 4 minutes.
Remove one tortilla from the pan. Flip the tortilla in the skillet and spread with warmed refried beans and dust with taco seasoning.
Place other tortilla on top of beans and layer with taco sauce, shredded cheese and tomato.
Cover skillet and continue cooking for 1 - 2 minutes, or until cheese melts and pizza is warmed through. (Alternatively, remove pizza from skillet and place on a small microwave-safe plate and cook in microwave for 30-45 seconds, or until cheese melts.)
If desired, garnish with any favorite toppings: shredded lettuce, chopped cilantro, sliced green onions, avocado slices, sliced black olives, guacamole, light dollop of sour cream, queso fresco, crushed red pepper flakes, etc.
