8ouncesrotini pasta (twists) any shortcut pasta would work such as ziti, penne, bowties, shells, elbows, etc.
1cupcooked fresh corn (from 1 to 2 ears) or frozen corn kernels, thawed I scraped the kernels from 2 ears of corn and then microwaved it for a few minutes to cook it slightly
14 - 15ouncescanned black beans, drained and rinsed
16 ouncesjarred tomato salsamild or medium, or to taste
1/2cupthinly sliced scallions
chopped fresh cilantro, for garnish (optional)
Instructions
Cook the pasta according to package directions and drain.
Meanwhile in a medium size saucepan stir together the corn, beans, salsa and scallions. Place the pan over medium heat. Simmer the mixture, stirring occasionally, until well heated.
Combine the drained pasta and sauce. Stir well to combine. Serve.
