Mixed Green Salad with Dates and Goat Cheese Recipe

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon reduced-sodium soy sauce
  • 1/8 teaspoon freshly ground black pepper
  • 6 cups mixed baby greens (mesclun mix)
  • 1/2 cup pitted soft fresh dates (such as Medjool), quartered lengthwise
  • 3 tablespoons crumbled soft goat cheese

Instructions

  • In a small bowl, whisk together the oil, vinegar, soy sauce and pepper.
  • Place the mixed greens in a large salad bowl.
  • Add the dressing and gently toss to evenly coat the greens.
  • Add the dates and goat cheese and toss gently to combine.

Recipe Notes

This makes 4 side-dish size servings. I sometimes make half a batch and eat it for lunch all by myself.
 
I've also used sherry vinegar instead of red wine vinegar, which is delicious.
