This deliciously sweet and salty frozen peanut butter pretzel pie is a snap to prepare, but needs at least 2 hours in the freezer to firm up before serving. We promise, it's worth the wait!
3cupslight vanilla ice cream, slightly softened (I used Halo Top)
1/3cupall natural creamy peanut butter
1pre-made chocolate pie crust
2tablespoonssugar-free chocolate syrup
1/3cupcrushed pretzels
Optional Toppings:
Light whipped cream, chopped peanuts, etc.
Instructions
In a medium bowl, stir together the softened ice cream and peanut butter until thoroughly combined.
Spoon the mixture into the prepare crust and smooth in an even layer. Drizzle or drop the chocolate sauce over the top and then sprinkle with pretzels.
Place pie in freezer for at least 2 hours before serving.
Before serving, allow pie to sit out at room temperature until it begins to soften and can be cut with a sharp knife. (For easier cutting, try running the knife under hot water before slicing.)
Garnish with additional toppings if desired (light whipped cream, chopped peanuts, etc.)
Store any leftover pie in the freezer.

I think you could also make this with Halo Top Peanut Butter Cup ice cream and go with less peanut butter, or maybe even try mixing in a little powdered peanut butter instead of the creamy peanut butter.
