These easy Streusel-Topped Oven-Roasted Peaches turn ripe summer peaches into a simple, delicious dessert. Tender roasted peaches are topped with a golden almond streusel and are especially delicious served warm with a scoop of vanilla ice cream.
2tablespoonsslivered or whole blanched almonds, chopped
1tablespooncold unsalted butter, cut into pieces
Instructions
Preheat oven to 425F degrees.
Place the peach halves, cut side up, in a shallow baking dish.
Using a fork or clean hands, mash or rub the brown sugar, flour, almonds and butter together until a crumbly mixture forms. Top the peach halves evenly with the streusel mixture, pressing lightly into each peach.
Bake until the peaches are tender and the streusel is golden brown, about 15 minutes. Serve alone or with a scoop of light vanilla ice cream or Greek yogurt, if desired.
