Salty. Sweet. Crunchy. These simple pretzel sandwich cookies are a simple sweet treat for small or large gatherings - just 40 calories and 2 WW Points each!
Gather and prepare all ingredients. Preheat oven, or toaster oven, to 350F degrees.
Place 10 mini pretzels on a small cookie sheet. Top each pretzel with a Rolo caramel candy.
Bake for 3-5 minutes, or until Rolo candies turn shiny and slightly melty, but are still holding their shape.
Remove from oven and top each one by press remaining pretzels into the melting Rolo’s, creating the cookie tops. If not drizzling optional chocolate, place in freezer for a few minutes to allow cookies to firm up.
If using the extra chocolate drizzle, add 1-2 tablespoons chocolate chips into a microwave-safe bowl. Gently heat in microwave in 30-second increments, stirring chocolate in between, just until chocolate is melted. Be careful to not scorch the chocolate by cooking it too long – it will quickly become unusable.Drizzle using a spoon or add chocolate to a small plastic baggy, snipping off one corner and then drizzling over each cookie. Place cookies in freezer for a few minutes to allow them to set.
