Add the apple slices, ground cinnamon and water to inner pot of Instant Pot and give a stir.
Cover the pot and lock the lid in place. Place the the steam release valve in the "Sealing" position and cook on HIGH pressure for 10 minutes.
Once the cooking cycle completes, allow the pressure to release naturally for 10 minutes and then move the steam release valve to "Venting" position and release the remaining pressure (being careful to not get burned). You may want to cover the release valve with a dish towel as a lot of moisture will be also be released.
After the float valve drops, unlock and remove the lid.
Use an immersion blender or handheld potato masher to mash the applesauce to your desired consistency, from chunky to smooth.
Enjoy this applesauce warm, at room temperature, or chilled from the refrigerator.
Store any leftover applesauce in an airtight container in the fridge.

For a spicier flavor, try adding a little cayenne pepper or ginger. In addition to cinnamon, I think nutmeg, allspice, clove or pumpkin pie spice would all work well. This recipe uses peeled apples, but you could always leave the skin on which will add little flecks of color to your applesauce. While I really like the natural sweetness in this recipe, you could always add a little honey, agave, or maple syrup. Be sure to adjust your WW Points when making any ingredient substitutions.
