Preheat air fryer to 400F degrees. (I used my Cosori TurboBlaze™ with the crisper plate.)
Using a vegetable spiralizer, cut the potato (peeled or unpeeled, your choice) into spirals. Break or cut spirals into 4- to 5-inch pieces.
In a medium bowl, stir together the potato spirals, oil and salt. Mix to coat well.
Place half the potato spirals in the preheated air fryer basket, keeping them in a single layer as much as possible. Press Air Fry button and cook for 5 minutes. (Depending on size of your air fryer, you may need to cook more batches. Buttons and cooking functions on your air fryer may be different.)
After cooking cycle completes, toss the fries in the basket (or given them a gentle stir) and sprinkle with 1-1/2 teaspoons Everything Bagel Seasoning.
Cook for 3 additional minutes at 400F degrees. (You may want to adjust the cooking time on your air fryer to achieve the crispiest golden fries).
After cooking cycle completes, toss the fries in the basket and sprinkle with remaining 1-1/2 teaspoons seasoning.
Enjoy immediately!

I made both (regular curly fries and shoestring fries and liked them both). I preferred the regular curly fries fresh out of the air fryer—in my opinion they were the ideal combination of crunchy and crispy chewy with a nice potato flavor.I also liked the shoestring fries, but they were much crispier (due to being much thinner), so you have to be careful with your cooking times to not burn them. For leftovers, I much preferred the shoestring fries as they reminded me a lot of the Potato Stix I used to eat as a kid.
Variations and Substitutions
Sweet Potato Fries: Substitute sweet potato for russet potato.No Avocado Oil? Substitute your favorite high heat vegetable oil such as peanut, grapeseed, sunflower, safflower or canola. If you want to use olive oil for air frying, it's recommended to use light olive oil or refined olive oil, which have higher smoke points and are more suitable for higher-heat cooking methods. These types of olive oil can withstand the temperatures typically used in air frying (usually between 350°F to 400°F or 175°C to 200°C) without smoking or producing undesirable flavors.No Spiralizer? You can cut your fries into thin even french fries or steak fries instead.No Everything Bagel Seasoning? Use whatever seasoning you prefer to create all kinds of varieties of curly fries. Classic salt and pepper, garlic powder, cajun seasoning, taco seasoning, ranch seasoning, Old Bay seasoning and/or grated Parmesan all would be delicious.No fine sea salt? Use whatever salt you prefer. Regular sea salt, truffle salt, kosher salt, seasoning salt, smoked salt, etc.Easy Alternative? Substitute your favorite brand of plain frozen fries and season them with the Everything Bagel Seasoning.
