Ingredients
1can(15 ounces) pure pumpkin puree (not pumpkin pie filling)
1-1/2cupsplain, non-fat Greek yogurt
3eggs
1/2teaspoonsalt
2teaspoonspumpkin pie spice
1teaspoonpure vanilla extract
2/3cupSplenda
Instructions
In a medium mixing bowl, combine all ingredients with an electric mixer until smooth.
Pour into a 9-inch (or 10-inch) pie plate sprayed with non-stick cooking spray.
Bake at 400F degrees for 15 minutes, then lower temperature to 325F degrees for 45 minutes, or until a knife inserted in the center comes our clean.
Serve warm or chilled.
