This Bananas Foster Cottage Cheese Toast is a quick, high-protein breakfast made with whole-grain toast, creamy cottage cheese, sliced banana, cinnamon, and a lightly caramelized brown sugar-style topping. It’s warm, satisfying, and ready in minutes using your toaster oven broiler.
1 slicewhole grain bread(with 60-80 calories) or any bread you prefer. I like sourdough.
1/4cuplow fat cottage cheese
1/3cupsliced bananas(6-8 slices)
Sprinklecinnamon
1-1/2teaspoonsnatural no calorie brown sugar substitute (such as Swerve, or your preferred sweetener. I often use brown sugar)
Instructions
Toast the bread until golden and crisp.
Spread the cottage cheese evenly over the toast. Top with sliced banana. Sprinkle with cinnamon and brown sugar substitute.
Place under the broiler (toaster oven or standard oven) for about 1 minute, watching carefully, until the topping looks lightly caramelized and glossy.Optional: If using a kitchen torch, torch the topping for 5–10 seconds until lightly caramelized.
Serve immediately.

Use a sturdy whole-grain bread so the toast holds the toppings well. I like sourdough.
