Gather and prepare all ingredients. (I made this granola in my Cosori TurboBlaze™)
Remove the crisper plate from the basket. Press "Preheat" and lower the cooking temperature to 345F degrees and press "Start". The Cosori will preheat for 4 minutes.
In a medium bowl, stir together the oats, almonds, shredded coconut, pepitas, coconut oil, maple syrup, cinnamon and cardamon until well mixed.
After the preheat finishes, remove the cooking basket and pour the granola mix into the preheated basket and smooth into an even layer.
Press "Bake," increase the temperature to 345F degrees and lower the time to 8 minutes. Press "Start" to begin cooking.
After about 4 minutes (halfway through the cooking time), remove the basket and give the granola a stir.
When the cooking cycle finishes, remove the basket and place on a wire rack and allow the granola to cool. The granola will get crispy as it cools.
Store any leftover granola in an airtight container at room temperature.

You could always substitute olive oil or avocado oil for the coconut oil.Try agave syrup, date syrup or honey in place of the pure maple syrup. Substitute an equal amount of nuts for the chopped almonds (walnuts, pecans, cashews, peanuts, etc).To make this granola gluten-free, be sure to use rolled oats that are marked as gluten-free.
