These lightly sweetened peanutty balls dipped in chocolate are a lot like classic buckeye candies, but made with much less sugar.

Ingredients
½cupcreamy peanut butter no sugar added
2tablespoonsTruvia Baking Blend
3tablespoonslight cream cheese
1tablespoonTruvia Brown Sugar Blend
½teaspoonvanilla extract
1cupcrispy rice cereal
⅓cupmini chocolate chips
½teaspooncanola oil
Instructions
Place a piece of wax paper or silicone liner on small baking sheet and set aside.
In a mixing bowl, add peanut butter, Truvia Baking Blend, light cream cheese, Truvia Brown Sugar Blend and vanilla. Cream together with an electric mixer until well mixed and thoroughly combined.
Carefully fold in the crispy rice cereal.
Roll into 16 balls, using about 1 tablespoon mixture each, and place on prepared baking sheet.
In a small microwavable bowl, add the chocolate chips and oil. Microwave on HIGH in 30 second bursts, stirring after each pause, until melted.
Cover half of each bon bon by dipping in the melted chocolate, or simply drizzle chocolate over bon bons.
Place bon bons in refrigerator until set.
Store any leftovers in an airtight container in the refrigerator.
Recipe Notes
