Ingredients
2tablespoonsmandarin orange segments in juice, not drained
¼cupangel food cake mix
Instructions
Spray a microwave-safe mug, or small bowl, with nonstick spray.
Add mandarin orange segments to mug and completely mash with a fork.
Add the cake mix and stir until thoroughly combined.
Microwave on high (100%) power until set, about 1 minute and 15 seconds (time may vary depending on microwave strength). To not overcook, start with 1 minute and check for doneness. If not set, continue cooking in 15 second increments.
Enjoy directly from mug or remove to a small plate.

To not overcook this cake, cook for 1 minute then stop and see if it's set. If not, continue cooking on high in 15 second increments until set.All the mashed mandarin orange pieces sink to the bottom, so if you lightly peel the cake away from the sides of the mug with a fork, it should drop out onto a small plate with the bottom on top. I think this makes a nicer presentation!

No mandarin oranges? Choose 2 tablespoons of any canned fruit with juice.
