A simple, no-bake alternative to your favorite Girl Scout Samoas Cookies with only 4 ingredients.

Ingredients
1cupMedjool dates, pitted
1cupunsweeted shredded coconut
⅓cupmini chocolate chips
½teaspooncoconut oil
Instructions
Line a small baking pan with parchment paper and set aside.
Toast your coconut by pre-heating your oven to 400F degrees. Place coconut on rimmed baking dish and toast until golden, about 5-10 minutes. Alternatively, add your shredded coconut to a skillet and heat over medium heat until golden brown.
Make your cookie dough: Process the dates and toasted coconut in a food processor until formed into a sticky dough.
Using 1 heaping tablespoon of dough, roll into balls using the palms of your hands, then flatten and shape into thick discs. Place flattened cookies on prepared baking pan.
Using the small end of a spoon, end of a chopstick or a straw, poke holes into center of cookies and reshape into discs, as necessary.
Place baking sheet in freezer so cookies can firm up.
Add chocolate chips and coconut oil to small microwave safe bowl. Microwave in 15 seconds increments until chocolate is melted, being sure to stir in between to help prevent the chocolate from burning.
Remove baking pan from freezer and dip bottoms of cookies in melted chocolate; placing them back on parchment.
Once all cookies have been dipped, add remaining chocolate to small plastic baggy and snip off one small corner of baggy. Drizzle remaining chocolate over tops of cookies.
Return baking pan with cookies to freezer until chocolate hardens.
Store cookies in an airtight container (separated by a layer of wax or parchment paper, if necessary, to prevent sticking) in the refrigerator.
Recipe Notes
If your Medjool dates are fresh, you just need to remove the pits. If they are older and a little dried out, you can soak them in warm water for a few minutes to soften them up. Be sure to drain completely and blot with a paper towel to remove any excess water.My dates were on the large side, so it took about 10 for me to get one cup.
