In a medium to large saucepan add the bacon, onion, bell pepper and celery. Cook until soft over medium heat, stirring frequently (about 7 minutes).
Stir in the garlic and tomato paste and cook for one minute.
Add the baked beans, pinto beans, sausage and water. Stir to combine and let simmer for 15 minutes over medium heat.
Add the milk and stir. Continue to simmer for 10 more minutes.
Add the spinach, or greens, and continue to cook for 5 minutes.
Season to taste with black pepper before ladling into bowls and serving.
Recipe Notes
Substitute lean ham or Canadian bacon for the turkey bacon.
Use your favorite type of greens in place of spinach.
Make it dairy-free and replace milk with unsweetened plain nut or soy milk.
Use two cups of water instead of the milk for a less creamy option.
