Ingredients
1large papayaabout 1 pound, halved lengthwise, seeds removed and flesh scooped out of peel
1frozen banana
6-7ice cubesabout 1 cup
2/3cupplain nonfat Greek yogurt
1teaspoonfinely chopped peeled fresh ginger
1tablespoonhoney
1tablespoonfresh lemon juice
8fresh mint leavesplus more for garnish if desired
Instructions
Combine the papaya, banana, ice cubes, ginger, honey, lemon juice and fresh mint leaves in a blender and blend until smooth and creamy. Thin with water as necesary to achieve desired consistency.
Pour into 2 glasses. Garnish with mint and serve.
