Author: Martha McKinnon | Simple Nourished Living
1poundtrimmed chicken breasts, cut into 1-inch cubes
1jar(15 ounces) chicken tikka masala sauce (I used Patak's)
Ideal slow cooker size: 1-½-Quart.
Place the cubes of chicken in your crock pot.
Add the jar of sauce and stir to combine.
Cover and cook on LOW for 3 to 4 hours, until the chicken is tender.
Serve with basmati rice and peas, if desired.
If you want, you can stir in a little 2-3 tablespoons of yogurt, sour cream or coconut milk at the end to make the sauce a little creamier and less tomatoey. A little chopped fresh cilantro would be nice too.Next time, I'll consider seasoning the chicken with a few spices first. This sauce would be good with shrimp, potatoes, peas and/or cauliflower too.Serving size: ¾ cup5*SmartPoints (Green plan)4*SmartPoints (Blue plan)4*SmartPoints (Purple plan)6*PointsPlus (Old plan)
