28ouncescanned diced tomatoes, undrained
½cupgrated Parmesan cheese
1tablespoonparsley
1teaspoongarlic powder (substitute 3 to 4 cloves fresh minced garlic if you prefer)
1teaspoondried basil
1teaspoondried oregano
½teaspoonblack pepper
Instructions
Ideal Slow Cooker Size: 4 to 5-Quart
Place the pork in the slow cooker.
Combine the tomatoes, cheese, parsley, garlic, basil, oregano and pepper and pour over the pork.
Cover and cook on LOW for 6 to 8 hours, or until the pork is fork tender.
Recipe Notes
Variations:
Instead of Pork Roast - substitute lean pork chops, beef roast, or chicken thighs (I like boneless, skinless)
More Vegetables - onions, peppers and mushrooms would all be tasty
Vegetarian - substitute white beans, garbanzo beans or lentils for the pork
