Heartier and denser than muffins, these single-sized apple cinnamon baked oatmeals are delicious warm from the oven, at room temperature or cold from the fridge. You can also reheat them for a few seconds in the microwave.
Preheat your oven to 350. Coat 12 muffin tin cups with nonstick cooking spray.
In a large bowl stir together the oats, brown sugar, baking powder, cinnamon and salt. Add the eggs, applesauce, milk, vanilla and apples and stir until well combined.
Spoon the oatmeal mixture evenly between the prepared muffin cups. Bake uncovered for 20-25 minutes or until oatmeal is lightly browned and firm and dry when touched.
Take out of the oven and let the oatmeal cups cool for 5 minutes. Remove muffins and serve.

These baked oatmeal cups can be made completely ahead of time and frozen for up to 3 months. I make a double batch of these and freeze them all the time! They reheat beautifully, about a minute for two muffins.No old fashioned oats? I've also used quick cooking oats with great results. Just don't use instant oatmeal!Apples? I used honey crisp apples picked from my sister's tree, but any apple variety you like or have on hand will work. Peeled or unpeeled. it's your choice. Be sure to chop the apples into small pieces of less than ½ inch to insure they soften during baking. You could also shred the apple instead of finely chopping if it's easier.Different Spices? I used Penzeys Pie Spice instead of Cinnamon.
