2cans(14 to 15 ounces) white beans, rinsed and drained
4cupslow sodium chicken broth
½cupchopped fresh cilantro, plus more for serving
lime wedges, for serving, if desired
toppings such as corn chips, shredded cheese, sour cream, etc., if desired
Instructions
In a large pot, heat the oil over medium-high heat. Add the onion, green pepper, garlic, ground chicken, and spices. Cook, breaking up the chicken with a wooden spoon, until it is no longer pink, 8 - 10 minutes.
Add the canned chiles, corn, beans and broth and bring to a gentle boil. Lower the heat and simmer for 10 minutes.
Stir in the cilantro. Taste and add more salt if you think it needs it.
No Chicken: substitute lean ground turkey or pork. You could also use chicken breast instead.
No Green Chiles: use your favorite green salsa instead
