A simple and satisfying way to turn a cup of WW Instant Oatmeal into an Instant Oatmeal "Muffin." This single serving of microwaved baked oatmeal was tasty to me, a longtime lover of oven baked oatmeal muffin cups.
1containerWW Instant Oatmeal (I used pumpkin spice flavor)
1largeegg
2tablespoonsunsweetened applesauce
2packetsnon calorie sweetener (I used Truvia)
¼teaspoonbaking powder
pinchcinnamon
Instructions
Stir the egg, applesauce, sweetener, baking powder and cinnamon into the cup of WW Instant Oatmeal until the mixture is well combined.
Microwave at full power until the top has set and is firm to the touch. Time will vary depending on the power of your microwave, but should be somewhere between 60 seconds and 2 minutes. I cooked mine for 60 seconds and then an additional 50 seconds.
Let cool a bit. Eat with a spoon or fork right from the cup or tip it out onto a plate. Eat as is or top with additional fruit.
