Light & healthy alternative to avocado toast made with a low carb tortilla

Ingredients

high fiber low carb tortilla
▢
1 ½
tablespoons
reduced fat cream cheese

teaspoon
everything bagel seasoning
▢

ounce
sliced avocado (about ¼ cup)

tablespoons
chopped sundried tomatoes (not packed in oil)
▢

tablespoon
precooked real crumbled bacon

cup
chopped spinach
Instructions
Spread the tortilla with cream cheese and then sprinkle with the everything bagel seasoning. Top with avocado, sundried tomatoes, bacon and spinach.
Fold tortilla in half or wrap it up like a burrito.

Variations & Substitutions
Warm the tortilla in the microwave for a few seconds to make it easier to fold.
Add sliced hardboiled egg,
egg salad
, or sliced turkey or chicken for a heartier sandwich.
Skip the sun-dried tomatoes and add chopped fresh tomato instead.
Substitute your favorite lettuce for the chopped spinach. I like roughly chopped arugula.
Warm the tortilla in the microwave for a few seconds to make it easier to fold.
Use a wedge of Laughing Cow cheese in place of the reduced fat cream cheese.
No everything but the bagel seasoning?
