10-12largeshrimp, peeled and deveined (about 8 ounces)
½mediumEnglish cucumber, thinly sliced
Sea salt and freshly ground black pepper
Instructions
Preheat the oven to 375F degrees.
Place the wine, ½ tablespoon dill and cayenne pepper in a medium sized oven safe casserole.
Top with shrimp. Season with salt and pepper.
Top with cucumber slices, re-season with salt, pepper and remaining dill.
Bake for 15 to 18 minutes, or until shrimp are firm, pink and fully cooked.
Serve hot from the casserole.
Recipe Notes
You'll want about ½ pound of shrimp. The number will depend upon their size.Even though the cucumbers will soften as they bake, they will still be firm.
