  • 1/2 cup orange juice
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 3/4 cup couscous
  • 2 tablespoons lemon juice
  • 1 tablespoons extra virgin olive oil
  • 3/4 cup diced seeded peeled cucumber
  • 1/4 cup chopped dried apricots
  • 1/4 cup chopped green onions
  • 1/4 cup packed fresh mint leaves, chopped
  • 3 tablespoons coarsely chopped pistachios


  • In a small saucepan combine the orange juice, water and salt. Bring to a boil over high heat. Remove from the heat and whisk in the couscous. Cover and let stand for 5 minutes. Fluff the couscous with a fork and then transfer it to a large bowl. Let it cool completely.
  • In a small bowl whisk together the lemon juice and oil.
  • To the cooled couscous add the cucumber, apricots, green onion and mint.
  • Drizzle on the dressing and gently toss to coat.
  • Sprinkle with pistachios. Season to taste with salt and pepper.
