Skinny Waldorf Salad Recipe

Diced apples, celery, red grapes, and dried cranberries in a creamy mustard-enhanced yogurt dressing.

Ingredients

  • 1/2 cup plain non-fat Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey
  • 2 Granny Smith apples, peeled and diced
  • 2 Honey Crisp apples, peeled and diced
  • 1-1/2 cups thinly sliced celery
  • 1-1/2 cups red seedless grapes, sliced in half
  • 3 tablespoons dried cranberries or cherries, roughly chopped
  • 3 tablespoons roasted sunflower seeds (optional)

Instructions

  • To make the dressing, in a small bowl, whisk together the yogurt, mayonnaise, mustard and honey, until well blended.
  • In a large bowl, combine the apples, celery, grapes and dried cranberries. Add the dressing and stir gently to coat the mixture.
  • Cover and refrigerate for at least 30 minutes, until chilled, or for up to 2 hours.
  • If desired, sprinkle with sunflower seeds before serving.

Recipe Notes

Cranberry Waldorf Salad Variation: reduce the yogurt to 1/4 cup and mix it with 1/2 cup of whole-berry cranberry sauce. Omit the mustard and honey.
