Easy no bake cookies with two kinds of cereal - crisp rice and oats. If you're not a corn syrup fan, try substituting it with honey or rice syrup.

Ingredients
2 ½cupscrisp rice cereal
2cupsquick cooking oatsuncooked
½cupfirmly packed dark brown sugar
½cuplight corn syrup
½cupcreamy peanut butter
1teaspoonvanilla extract
1cupchocolate chips
Instructions
Lightly spray an 8-inch square baking pan with cooking spray and then set it side. Combine the cereal and oats in a large bowl and set it aside as well.
In a small saucepan over medium-high heat bring the brown sugar and corn syrup to a boil, stirring constantly. Remove from heat and stir in the peanut butter and vanilla until well blended.
Pour the mixture over the cereal mixture and stir until it's well coated. Let the mixture rest for 2 minutes and then stir in the chocolate chips.
Dump the mixture into the prepared pan and press into place with clean moist hands or a rubber spatula coated with cooking spray. Cool completely and then cut into 20 bars. Store these easy no bake cookies in a covered container between layers of wax paper.
