Fresh Corn Tomato Salsa

This simple fresh corn tomato salsa is a great way to jazz up tacos, quesadillas or simple grilled fish or chicken.

Ingredients

  • 1 cup corn kernels (about 1 ear)
  • 1/2 green bell pepper, seeded and diced
  • 1 medium tomato, seeded and diced
  • 3 tablespoons chopped cilantro
  • 3 teaspoons fresh lime juice, or more to taste
  • 1/2 teaspoon salt

Instructions

  • In a medium bowl, stir together the corn, bell pepper, tomato, cilantro, lime juice and salt. Taste and adjust seasonings.
  • Set aside for at least 20 minutes to allow the flavors to blend.

Recipe Notes

This simple fresh salsa really dresses up quesadillas. It was so good, I can't wait to make it again while fresh corn is still in season.
But in a pinch, I think it would be fine made with thawed frozen, or canned drained corn too.
