Super Simple 2-Ingredient Low Fat, Vegan Crock Pot Chocolate Rice Pudding is surprisingly creamy and delicious. It's not too sweet with a light chocolate flavor.
Ideal slow cooker size: 1-½- to 2-Quart. Grease the slow cooker insert and set aside.
Combine the rice and almond milk in the slow cooker. Stir well.
Cover and cook on HIGH for 2-½ to 3 hours, or on LOW for 4 to 6 hours, or until the rice is very tender and pudding is creamy. (If you are able, give the pudding a quick stir every hour or so.)
Stir well before serving.
Serve warm or chilled.
Recipe Notes
For a richer chocolate flavor, try adding ¼ cup chocolate chips and/ 1 tablespoon unsweetened cocoa powder and 2 tablespoons sugar.
