Ingredients

  • 6 ounces chicken sausage with apple, thinly sliced
  • 1 onion, finely chopped
  • 1 small head cabbage, shredded (about 8 cups)
  • 2 medium potatoes, peeled and coarsely shredded
  • 1 large carrot, coarsely chopped
  • 3 garlic cloves, minced
  • 8 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon cider vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  • Ideal slow cooker size: 4- to 6-quart.
  • In your slow cooker, combine the sausage, onion, cabbage, potato, carrot, garlic, broth, thyme, bay leaf, vinegar and salt and pepper.
  • Cover and cook on HIGH for 4 to 6 hours, or on LOW for 5 to 7 hours, until vegetables are tender.
  • Discard the bay leave. Taste and adjust seasoniongs, adding more salt, pepper and/or vinegar as necessary.
