  • 6 ears corn, husks and silk removed
  • 1/2 cup thinly sliced green onions
  • 3/4 cup halved cherry tomatoes
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice or cider vinegar
  • Salt and freshly ground pepper, to taste


  • Cut the corn kernels from the cob into a large bowl.
  • Add the remaining ingredients to the bowl and stir to combine.
  • Cover and let sit for at least 15 minutes to give the flavors a chance to meld.
