All the gooey chocolate-marshmallow goodness of classic campfire s’mores — without the campfire, the mess, or all the extra calories.
These easy Open-Faced Baked S’mores are made right in the oven or toaster oven using just 3 simple ingredients. Because they’re open-faced and portion controlled, they deliver all the nostalgic flavor of traditional s’mores for far fewer calories and WW Points.
They’re quick, fun, kid-friendly, and perfect whenever a s’mores craving strikes — no summer campfire required.

Why You’ll Love These Skinny Baked S’mores
- Ready in minutes
- Just 3 simple ingredients
- No campfire needed
- Lower in calories than traditional s’mores
- Perfect for portion control
- Easy to make in the oven or toaster oven

Ingredients & Substitutions
- Graham crackers — The classic crunchy base for any s’mores recipe. Regular, cinnamon, chocolate, or gluten-free graham crackers all work well.
- Milk chocolate chips — Give you that classic Hershey-style chocolate flavor in a lighter, portion-friendly way. Semi-sweet or dark chocolate chips can also be used.
- Miniature marshmallows — Melt quickly and evenly while helping keep portions smaller and lighter than full-size marshmallows.
How Many Calories and WW Points?
A traditional s’more made with graham crackers, a full marshmallow, and chocolate bar can easily pack about 200 calories and 9 WW Points.
According to my calculations, each serving of these Open-Faced Baked S’mores has just 100 calories and 4 WW Points.

How to Make Open-Faced Baked S’mores
Step 1: Prepare the Pan
Line a metal baking sheet (affiliate link) or toaster oven tray with foil.
Step 2: Assemble the S’mores
Break the graham crackers into 4 small rectangles and place them close together on the prepared pan.
Sprinkle the chocolate chips evenly over the crackers and top with miniature marshmallows.
Step 3: Broil
Place the pan under the broiler about 6 inches from the heat source.
Broil for 1 to 2 minutes, or until the marshmallows become puffy and lightly golden brown.
Watch very carefully — marshmallows can go from perfectly toasted to burnt very quickly.
Step 4: Serve
Carefully remove from the oven and serve immediately while warm and gooey.
Recipe Notes & Variations
These baked s’mores are one of my favorite ways to enjoy the flavors of classic s’mores without needing a fire pit or grill.
Using mini marshmallows and chocolate chips helps keep the portions lighter while still delivering plenty of chocolatey, gooey goodness.
Fun Variations
- Use dark chocolate chips for a richer flavor
- Add a thin slice of banana or strawberry before broiling
- Sprinkle with chopped peanuts or pecans
- Use cinnamon graham crackers for extra flavor
- Try peanut butter chips or butterscotch chips for a fun twist
These are best enjoyed fresh and warm, right after broiling.

WOW…What a great summer treat. Love them.
Gosh, I’m sorry! I see that you DID say “rectangle”. I just wanted to double-check the smart points because of the recent change to the WW program, and all I see on the recipe builder is graham cracker “square”. Guess I’ll just have to check the nutritional information for putting into the recipe builder. Sorry!
I’ve never really been clear on what a “graham cracker square” is. Do you mean an actual square by breaking the rectangle, as it comes out of the package, into two squares, or the entire rectangle itself? Thanks!

Martha, these look like the perfect way to enjoy s’mores in the colder months when we aren’t able to build a campfire. I’ve never thought of using chocolate chips and mini marshmallows, but this is a definite way to cut the calories without losing the taste. Thanks for sharing!
