This lighter version of the classic Bisquick Impossible Ham and Swiss Pie is one of my favorite easy recipes when I’m craving comfort food. Quiche is usually made with cream and lots of cheese, but this simple impossible pie is lightened up with lean ham, reduced-fat Swiss cheese, and low-fat milk.
It mixes together in minutes, bakes up golden and delicious, and can even be made gluten-free by substituting gluten-free Bisquick for the original. Perfect for a quick weeknight dinner or a satisfying weekend brunch.

- Fully cooked lean ham – deli ham, Canadian bacon, ham steak, or leftovers all work well.
- Reduced-fat Swiss cheese – mild and nutty, with fewer calories than full-fat.
- Green onions (scallions) – fresh, mild onion flavor to brighten the pie.
- Low-fat milk – creamy texture without extra fat; non-dairy alternatives work too.
- Eggs – bind the filling and create a soft, custard-like consistency.
- Bisquick baking mix – creates the signature crust and texture; can use gluten-free, Kodiak Cakes, or a homemade mix.
- Salt and pepper – to season the filling.
Step-by-Step Instructions
Step 1: Gather and prepare all ingredients.

Step 2: Preheat oven to 400F degrees. Lightly grease a 9-inch pie dish and set aside.
Step 3: Layer ham, cheese and green onion in pie dish.

Step 4: In a medium mixing bowl, stir together the Bisquick, milk, salt, pepper and eggs until well mixed. Pour evenly over layer ingredients in pie dish.

Step 5: Bake for 30 to 35 minutes, or until a knife inserted near center comes out clean. Allow dish to cool on wire rack for at least 5 minutes before cutting.

Step 6: Cut into 6 equal wedges and serve.

Recipe Notes
- Add extra veggies like broccoli, mushrooms, or spinach
- Substitute gluten-free Bisquick or Bisquick Heart Smart for the original
- DIY option: use ½ cup flour + ½ teaspoon baking powder in place of Bisquick
- For a flavor twist, swap in cheddar or mozzarella cheese

I love this pie for dinner or lunch. I use for wedges of laughing cow, light cheese instead of the Swiss cheese. I found when I bought the Swiss cheese to use, I ate the other 4 ounces. So using the light cheese wedges works good for me. I add chopped onion, I squirt a nice amount of Dijon mustard into the egg, milk, Bisquick, and add some oregano on top. Itโs delicious.

I was one of the luckies who got to taste this, and it was delicious! Much lighter than the usual quiche because it was crust less!
