(30 Days of Juicing Day #2 - Green Genie Juice)
Unlike Martha, I have been juicing on-and-off now for most of my adult life, but I now intend to have more "on" days than "off". (She may not remember, but it was she who bought me my first juicer (affiliate link) a very long time ago as a gift).
One thing that I love about juicing is that you are free to use whatever fruits and vegetables you like best and can easily modify the amounts used.
And I can honestly say that I do enjoy the taste of green juices, even shots of wheatgrass - which is an acquired taste for most 🙂
The Skinny on Green Genie Juice
For Day #2 of our 30 Days of Juicing: Juice Fest - I wanted to try a tasteful, yet mild green juice.
I came across this recipe for Green Genie Juice, which consists only of celery, cucumbers and kale and felt it would be perfect.
From my own experience, I think you can easily go overboard with too many ingredients in your juice and wind up with something that is rather hard to identify (taste-wise) and may not look that appealing either 😉
If you're just starting out juicing, you may want to use only a few ingredients, taste as you go, and adjust accordingly (this is how I ended up modifying this recipe for Green Genie Juice). After all, you don't want to buy a ton of fresh produce and turn it into something that is undrinkable.
The original recipe calls for 1 stalk of celery, 3 cucumbers and 4 kale leaves. I ended up juicing 2 stalks/ribs of celery, 3 cucumbers, 4 kale leaves, and as well as ½ lemon and ½ lime. For me, the original recipe tasted ok, but it was mostly just cucumber and I was wanting a little more flavor. So, I ended up adding in ½ lemon and ½ lime which gave it a nice, fresh citrus flavor.
You'll get a lot of juice from this recipe - I ended up with about 32 ounces (or 4 cups), mainly because the celery and cucumber are mostly water, so feel free to cut in half if necessary. And keep in mind there lots of variables including size of fruits/vegetables used and type of juicer (affiliate link) used, so yields will vary.
According to our calculations, each 1 cup serving of this green genie juice has about 32 calories and 1* Weight Watchers Points Plus. The 3 cucumbers gave me a little more than 28 ounces of juice, which is all that was counted. We're not really concerned with the negligible calories from juicing the kale, celery, lemon and lime.
Green Genie Juice Recipe {30 Days of Juicing}
Ingredients
- 2 celery stalks
- 3 cucumbers
- 4 kale leaves
- ½ lemon
- ½ lime
Instructions
- Wash all produce well. Peel lemon and lime before juicing if desired, but not necessary. Juice all ingredients, serve and enjoy.

I'm so happy to see the 30 days of juicing! I received a juicer for Mother's Day and have yet to take it out of the box. This will give me some ideas of where to start and what to buy!

I agree fully that it's often best to stick to just a few different types of fruits or veggies when juicing. I'd say 3 is the perfect number, just like as used in this recipe.
