Every summer, I’m reminded that some of the best recipes hardly require a recipe at all. This Easy Watermelon Fruit Pizza is one of those fun ideas that’s as enjoyable to make as it is to eat.

A thick round of juicy watermelon becomes the “pizza crust,” topped with a thin layer of yogurt and a colorful assortment of fresh berries. It comes together in about 10 minutes, requires no baking, and always seems to bring smiles when I set it on the table.

Whether you’re hosting a backyard barbecue, heading to a picnic, or simply looking for a lighter way to satisfy a sweet tooth, this refreshing watermelon pizza is an easy reminder that simple, fresh food can be just as festive as more elaborate desserts.

  • Use very cold watermelon for the most refreshing dessert.
  • Assemble shortly before serving for the freshest appearance.
  • Cut with a sharp knife just before serving.

Variations

Patriotic

Decorate with strawberries and blueberries for the Fourth of July or Memorial Day.

Tropical

Use kiwi, pineapple, and toasted coconut.

Citrus

Top with mandarin oranges, blueberries, and lemon yogurt.

Let Everyone Decorate Their Own

Slice the watermelon into wedges and set out bowls of yogurt and fruit so everyone can create their own “pizza.”

Can You Make It Ahead?

You can prepare the fruit a few hours ahead, but assemble the watermelon pizza shortly before serving for the best texture.

Leftover slices can be refrigerated for a day, although the yogurt may become a little softer. If you have extra watermelon, cube it for fruit salad or smoothies.

Use Light and Fit or your favorite sugar-free, nonfat yogurt for a zero point slice.
If you use a container of low-fat yogurt it will still only be a 1-point treat.
I like key lime but feel free to use any flavor yogurt.
Top with fresh mint to make it extra festive.
Use any fresh fruit to top your pizza.
If you prefer, slice the watermelon into wedges and let everyone top their slice their way.

FAQs

Can I use another yogurt flavor?

Absolutely. Vanilla, lemon, strawberry, or coconut yogurt all work well.

Can I use other fruit?

Yes. Use whatever berries and seasonal fruit you enjoy. Just avoid overly juicy fruit that may make the yogurt slide off.

Can I make this dairy-free?

Yes. Simply substitute your favorite dairy-free yogurt.

How thick should the watermelon slice be?

About 2 to 3 inches thick works well. It makes the “pizza” sturdy enough to slice into wedges.

Can I make this ahead?

It’s best assembled shortly before serving, but you can prep all of the ingredients ahead of time.
