Weight Watchers Recipe of the Day: Skinny Fiber One Chocolate Raspberry Yogurt Parfait
This simple yogurt parfait is the most delicious breakfast I've had in a while.
I've been kinda stuck in a breakfast rut lately and decided to treat myself to something special.
What could be more light and luscious on a hot summer day than a chocolate raspberry yogurt parfait?
And why limit yourself to enjoying this only during the summer? I think it would be perfect for Valentine's Day too!
To make my Chocolate Raspberry Yogurt Parfait, I just layered the following in a pretty glass dessert dish:
- 1 (5.3) container nonfat raspberry yogurt (I used Chobani)
- 1 Fiber One Chocolate Brownie cut into little bits
- ¾ cup fresh raspberries
Easy as 1, 2, 3.
How Many Calories and WW Points in this Yogurt Parfait?
The Fiber One Chocolate Brownies Bar has 70 calories, 3 g fat, 17 g carbs, 6 g fiber, 2 g protein, *2 SmartPoints
The fruit on the bottom non-fat raspberry Chobani yogurt has 120 calories, 0 g fat, 18 g carbs, 0.5 g fiber, 12 g protein, *4 SmartPoints
The fresh raspberries have 45 calories, 0 g fat, 3 g carbs, 2 g fiber, 0 g protein and *0 SmartPoints.
So according to my calculations, the parfait has 235 calories and:
6 *SmartPoints (Green plan)
6 *SmartPoints (Blue plan)
6 *SmartPoints (Purple plan)
4 *PointsPlus (Old plan)

I think I'd forgotten how much I love the combination of chocolate and raspberries.
Chewy, creamy, sweet and tart, this chocolate raspberry yogurt parfait was a delicious combination of flavors and textures.

Skinny Fiber One Chocolate Raspberry Yogurt Parfait Recipe
Ingredients
- 1 container (6 ounces) non-fat raspberry yogurt (I used Chobani)
- 1 chocolate raspberry Luna fiber bar, chopped into small bits
- ¾ cup fresh raspberries
Instructions
- In a pretty individual dessert dish, layer ⅓ of the yogurt, ⅓ of the luna bar, and ⅓ of the raspberries.
- Repeat layering 2 more times.
- Enjoy immediately.
