I love collecting quick soup recipes, probably because I love soup - all kinds of soup. It's one of my favorite things to make and to eat, especially as I've gotten older.
Soups have a lot going for them, especially during these busy and economically trying times. They are convenient, quick and easy to make, cheap, and wholesome. And they're perfect for a quick lunch or simple supper any day of the week.
I used to eat a lot of canned and dehydrated soups because I like the convenience of being able to open a can or package and have soup ready in less than 10 minutes. That was before I discovered the joy of making quick soup recipes from scratch.
If you're not into soup making, you should give it a try. Soups are perfect for both beginning and busy cooks.
A lot of people are under the assumption that soup making is a long complicated process. Nothing could be further from the truth. You don't have to babysit a pot of simmering soup all day. Many can be made, refrigerated and then reheated in a hurry. And there are many great quick soup recipes, like these I've gathered here, that can be ready in thirty minutes or less.
It's important to remember that that an important key to good soup is tasting and seasoning. Sometimes all that's needed to take a soup from dull to delicious, is a liberal sprinkling of salt. So, don't be timid, just add your salt, pepper and other seasonings a little at a time until you get it just the way you like it.
Here are five great quick easy soup recipes, some with just four or five ingredients, to tempt your taste buds.

Quick Tortellini Soup Recipe
Prep Time: 5 minutes
Cook Time: 10 minutes
Yield: 4 servings
I was given this quick soup recipe years ago and it's been a regular in my meal rotation ever since. Feel free to add to it as you want. Sometimes I add a can of diced tomatoes and/or a cup of frozen peas. It's good with diced zucchini too.
Ingredients
6 cups chicken broth
1 package (9 ounces) refrigerated cheese-filled tortellini
1 package (9 ounces) frozen chopped spinach, defrosted
¼ cup grated Parmesan cheese
Recipe Preparation
Place the chicken broth in a large saucepan (3-quart) and bring it to a boil. Reduce the heat to medium and stir in the tortellini and spinach. Simmer, uncovered, stirring occasionally, until the tortellini is tender, about 6 minutes. Sprinkle each serving with about 1 tablespoon of grated cheese.

Quick Emergency Soup Recipe
Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 4 servings
This tasty easy soup recipe comes from the book Lost Recipes: Meals to Share with Friends and Family, by one of my favorite cookbook writers, Marion Cunningham. She believed that it was important to have a collection of "emergency recipes," made with ingredients that you always have on hand for those time and situations when you need a spontaneous meal, to feed unexpected guests or a friend in need of a simple supper and some company. I love the concept as much as I love this simple soup. Serve it with a green salad and toast or crackers.
Ingredients
4 cups chicken broth
1 carrot, chopped
1 stalk celery, chopped
1 medium onion, chopped
1 cup small shell pasta
Salt and black pepper to taste
1 cup grated Parmesan Cheese
Recipe Preparation
Put the broth in a pot and bring it to a boil. Add the carrot, celery and onion and boil gently for 10 minutes, then add the pasta and simmer gently until the pasta is tender, 5 to 8 minutes. Taste and adjust the seasoning, adding salt and pepper as needed. Serve in bowls and sprinkle generously with grated Parmesan cheese.
Variation: Add, subtract and substitute vegetables to your liking. When I last made this, I had baby bok choy in the refrigerator so I chopped on up and added it. In summer, you might replace the carrot, celery and onion with 2 unpeeled zucchini grated directly into the broth and then add the pasta right away and cook until the pasta is tender.

Quick Spicy Bean Soup
Prep Time: 5 minutes
Cook Time: 10 minutes
Yield: 4 servings
I don't even remember where I got this recipe, but it's a family favorite that can be made in minutes from ingredients I always have in the cupboard. Try it the next time you need something quick and easy.
Ingredients
2 cans (15 ounces each) refried beans
1 can (14-½ ounces) diced tomatoes
1 can (14 ounces) chicken broth
1 cup tomato salsa
Optional toppings: crushed tortilla chips, sour cream, chopped green onions, shredded cheese
Recipe Preparation
Place the the beans, tomatoes, broth and salsa in a pot and stir to combine. Cook, over medium heat, stirring occasionally, until heated through, 5 to 8 minutes. Serve with the optional toppings.

Quick Corn Soup Recipe
Prep Time: 5 minutes
Cook Time: 10 minutes
Yield: 4 servings
Serve with a simple salad, crackers, warm easy muffins or sandwich of your choice. It comes from a great cookbook for people who want to simplify their cooking and eating called the More-With-Less Cookbook.
Ingredients
2 cups corn, whole kernel or cream-style
3 cups milk, divided
Salt, pepper and celery or onion salt to taste
Recipe Preparation
Put the corn and 1 cup milk in a blender (affiliate link) and puree until smooth. Pour this mixture into a saucepan along with the 2 additional cups of milk. Cook, over medium heat, stirring occasionally, until heated through. (Don't boil.) Season to taste with salt, pepper and celery or onion salt.
Variation: Replace the corn with any leftover cooked vegetable of your choice.

Quick Chicken Noodle Soup Recipe
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: 4 servings
This is a quick and easy version of homemade chicken noodle soup made from chicken broth and leftover cooked chicken.
Ingredients
6 cups chicken broth
2 cups water
1 large onion, chopped
2 stalks celery, sliced
2 carrots, sliced
1-½ cups egg noodles
2 cups shredded cooked chicken
Salt and pepper to taste
2 tablespoons, chopped fresh parsley
Recipe Preparation
Put the broth and water in a soup pot and bring to a boil. Add the onion, celery and carrots, reduce heat and simmer gently for 15 minutes. Add the egg noodles and cook, stirring occasionally, until almost tender, 8 to 10 minutes. Add the chicken and cook until heated through. Season to taste with salt and pepper and garnish with the chopped parsley.
