Do you prefer homemade granola bars or the kind you buy in a box? I definitely prefer do-it-yourself granola bars, like these crunchy peanut butter granola bars that I made last week. Packed with real oats, honey, chopped peanuts, and peanut butter, they are like Nature Valley peanut butter crunchy granola bars, only better.

I found the recipe for these yummy crunchy peanut butter granola bars on Laine’s Recipe Box which she got from The America’s Test Kitchen Healthy Family Cookbook, a book I purged from my collection a while back because I rarely opened it. After making and tasting these crunchy granola bars, I’m experiencing serious remorse for not holding on to it longer. “What other recipe treasures are contained within it’s pages?” I’m wondering.

Nonfat plain Greek yogurt, stirred together with canned pumpkin puree, maple syrup and pumpkin pie spice and topped with skinny pumpkin spice quinoa cranberry granola is a light, healthy and delicious way to indulge your taste for pumpkin pie at breakfast.

Plain nonfat Greek yogurt has become one of the staples of my kitchen making regular appearances especially at breakfast. It’s a favorite Weight Watchers power food  that I’ve enjoyed in a multitude of ways this summer including in the French womens’ magical breakfast cream, skinny banana cream “pie”, and combined with a variety of fruit like these skinny strawberry yogurt granola parfaits.

Now that fall has arrived it seemed time to add another favorite power food – canned pumpkin puree – to the mix. With it’s healthy dose of vitamins, minerals and fiber, I love to keep a can or two around for when the mood strikes.

I enjoyed this light and healthy pumpkin pie yogurt for breakfast this morning and look forward to repeating it again tomorrow. With just 4 Weight Watchers PointsPlus, it’s an easy, healthy and delicious way to start the day.

I like to make my homemade skinny pumpkin yogurt with 1 part pumpkin and 2 parts yogurt, but feel free to adjust the ratios to suit your tastes. Maple syrup is one of my favorite sweeteners but you can always substitute whatever you like best. And I topped it with the homemade skinny pumpkin spice quinoa cranberry granola I made recently since it seems like such a perfect match but most any granola would work.

Low Fat Pumpkin Spice Quinoa Cranberry Granola

The idea for this low fat pumpkin spice quinoa cranberry granola was planted back in August when I saw Stephanie’s post for slow cooker pumpkin granola. Since temperatures were still in the triple digits at the time I tucked it away until it felt more like fall.

Now that it’s October my mind has turned to all things pumpkin so I knew the time was right to make my first ever batch of pumpkin granola.

This is what I came up with after comparing and contrasting three recipes:  the Pumpkin Granola from Two Peas & Their Pod, My favorite granola recipe (which comes from The Perfect Recipe for Losing Weight and Eating Great ) and Camilla’s Cranberry Quinoa Granola found in 5 Easy Steps to Healthy Cooking: 500 Recipes for Lifelong Wellness.

This is the first time I’ve made granola with both oats and quinoa and I liked the the way it turned – crunchy with lots of clumps. It’s nut free, but you could always add chopped almonds or pecans if you wanted (Just remember that this will increase the PointsPlus value.) I’ve been enjoying it for breakfast sprinkled on top of pumpkin yogurt (plain Greek yogurt mixed with pumpkin puree, pumpkin pie spice and maple syrup) as well as straight from the jar as a quick snack.

Nigella’s Breakfast Bars

I’ve been meaning to try these breakfast bars from Nigella Lawson for weeks. Sunday was finally the day and all I can say is, “What took me so long?”  They are the yummiest granola bar I’ve ever tasted, homemade or otherwise. It’s a good thing I only made a half batch because they are addictive, just like she said.

Once you taste these you’ll never want another store-bought granola bar, that’s for sure!

The recipe comes from  Nigella Express: 130 Recipes for Good Food, Fast one of my favorite of her cookbooks. As soon as I saw the picture of these homemade breakfast/granola bars, I had a feeling I would fall in love with them. They’re chock-a-block full of some of my favorite things including, coconut, dried cranberries, pumpkin seeds, sesame seeds, sunflower seeds, and peanuts, all held together with sweetened condensed milk.

Does anyone else find the smell of sweetened condensed milk intoxicating?

I shared a couple of these delectable oaty, chewy, sweet and crunchy breakfast bars with my Mom, who agreed that they’re delicious.

Add a piece of fruit or cup of yogurt for a great quick and easy no-cook breakfast.

To make them Weight Watchers friendly, I substituted nonfat sweetened condensed milk and cut them into 24 bars, instead of the suggested 16, giving them a PointsPlus value of 4.

I divided the recipe in half and baked them in an 8-inch pan but plan on making a full batch next time since they keep well. Try these yummy breakfast bars and see if you don’t become addicted too :-)

Layers of tangy nonfat Greek yogurt, sliced fresh strawberries, and granola spooned into a glass is a fun, healthy and delicious way to start the day. These strawberry yogurt granola parfaits will fill you up without weighing you down.

But, I need to be honest here. Layered fresh fruit and yogurt parfaits are not something I make during the week. They’re just a little too fussy for that.

Monday through Friday, I just dump the yogurt, berries and crunchy cereal (saving the granola for a special weekend treat) into a bowl…

Though, not as attractive, it tastes just as good and saves a few minutes.

But on the weekends, when I have a little more time, I like to fancy things up a bit.  And these strawberry, yogurt and granola parfaits do the trick.

To keep them light and healthy, it’s important to choose your ingredients carefully. There are huge variations in the amount of fat, calories and PointsPlus values among yogurts and cereals, especially granola. I’m a huge fan of nonfat Greek yogurt. If you’re not, just choose your favorite yogurt and adjust the PointsPlus values accordingly.

Another trick is to drizzle your honey, maple syrup, or agave over the yogurt instead of stirring it in, so you can really taste it and be satisfied with less.

And go heavy with the low PointsPlus value fruit and light with the granola, which adds great flavor and crunch, but can be high in PointsPlus values. So use just a sprinkle.

And if you are feeling especially ambitious, you can even make your own homemade granola. It’s a treat, but not something I do all the time.

According to The Nibble, today, 1/20, is National Granola Bar Day. There’s certainly no shortage of packaged granola bars lining the grocery store shelves with which you could celebrate.

Granola bars make a great snack and can be a better alternative for breakfast than high calorie muffins or doughnuts.

Here’s a great article with reviews of dozens of granola bars if you’re interested.

But, I think it would be much more fun to honor the day with a batch of healthy homemade granola bars, like this Great Granola Bar Recipe - brimming with wholesome ingredients including oats, wheat germ, almonds, maple syrup, cranberries, dates and apricots.

Healthy Homemade Granola/Energy Bars

Are you looking for a healthy homemade granola bar recipe? Here’s a great one with only 4 WW Points+.

This recipe makes delicious soft and chewy healthy granola bars (or energy bars) full of oats, dried fruit, and whole grains. They are not overly sweet – just lightly sweetened with the natural goodness of maple syrup – my favorite natural sweetener.

Try them once and I think you’ll want to make them again and again.

Not only are they healthy and delicious, they are easy as pie to make. They make an awesome in lunchbox treat and they also freeze well. I like to wrap individual bars in plastic wrap and place them in a zipper lock freezer bag so I can grab one when I need a snack.

If you love exercise and outdoor activities these homemade granola energy bars will keep you going for hours.

This recipe makes a cake-like soft and chewy granola/energy bar.

Healthy Homemade Granola Bars Recipe

Prep Time: 15 minutes
Bake Time: 20 minutes
Makes: 20 bars

Ingredients

1 cup rolled oats
1/2 cup shelled sunflower seeds
1/2 cup toasted wheat germ
1/4 cup whole-wheat flour
1/2 cup dried apricots
1/2 cup dried cranberries
1/2 cup dried pitted dates
1/2 cup raw almonds
1/2 cup nonfat dry milk
1 teaspoon cinnamon
1/3 cup pure maple syrup
2 large eggs

Directions

Preheat oven to 350F degrees. Grease a 9×13-inch baking pan with cooking spray.

Place oats, sunflower seeds, wheat germ, flour, fruit, almonds, dry milk, and cinnamon in a food processor and pulse until everything is roughly chopped. Add maple syrup and eggs and pulse until everything is well blended.

Spread the thick batter evenly into the prepared pan and bake until lightly browned, about 15 to 20 minutes.

Remove from the oven and allow to cool on a wire rack on for 10 to 15 minutes.

Cut bars into 20 bars.

Once they are completely cool, you can store these fruity, nutty, chewy, healthy granola bars in an airtight container for up to 3 days.

Nutritional Estimates Per Serving (1 bar): 133 calories, 5 g fat 5 gram protein, 20 g carbohydrates, 3 g fiber

  • Don’t overbake or they can get dry.
  • Use whatever combination of dried fruit and nuts that you like best.

Have you ever wondered about how to make granola bars at home?

There are dozens of different granola bars available at the grocery store, so there’s really no need to make them yourself, unless you want to.

I think granola bars are perfect snacks any time of day – as part of a grab and go healthy breakfast, afternoon snack or lunch bag treat. That’s why I developed this great ebook of granola bar recipes for you.

Granola bars come in lots of different flavors and styles. Some granola bars are chewy; some are crunchy. Some have long lists of ingredients and others just a few. Some homemade granola bars call for prepared granola, while others call for common granola like ingredients such as rolled oats, nuts, fruits, and a variety of sweeteners.

The first thing you need to do is figure out what kind of granola bar you want to make – chewy, crunchy, cakey – and then find a great granola bar recipe that seems like a good match.

I think it’s important to remember that granola recipes are meant only to be a guide that you can experiment with till you get them the way you like them. If a granola bar recipe calls for raisins, and you prefer dried cherries, make the switch. Baking is meant to be fun and creative, provided your substitutions make sense, such as one kind of fruit or nut for another.

If you’ve ever wondered how to make granola bars, you will be surprised at just how easy they are. Homemade granola bar recipes are quick and easy, like other bar cookie recipes, only healthier. Most contain dried fruits and nuts, and often call for whole-wheat flour.

Homemade Granola Bar Tips & Tricks

Read the recipe thoroughly before beginning to make sure you  have all the necessary ingredients and equipment and understand what you need to do.

  • Use the specified size pan so your granola bars are the right thickness and bake properly.
  • For easy clean up, line the baking pan with foil that extends over the edges on at least 2 sides by at least 1 inch.  This will create “handles” for lifting the slab of granola bars out of the pan once they have baked and cooled. You’ll be able to cut them more evenly too.
  • To line your pan – turn the pan upside down. Tear off a piece of foil longer than the pan and place the foil on top of the pan. Wrap the foil around the pan and then carefully remove it. Turn the pan right side up and then place the foil liner inside the pan gently shaping it to fit.
  • Measure accurately. Use metal or plastic measuring cups for dry ingredients and clear glass or plastic measuring cups with a spout for liquid ingredients. Fluff your flour with a whisk before scooping or spooning into your measuring cup and leveling with the flat side of a knife or spatula.
  • Use the fat or shortening specified in the recipe. Soft, whipped, liquid, or reduced fat butters or margarines contain too much water and will not produce good results.
  • Preheat the oven for 10 to 15 minutes and use an oven thermometer to make sure the oven temperature is correct for baked granola bars.
  • Cool your granola bars on a wire rack so that air can circulate and they don’t become soggy.
  • Cool completely before storing.

Homemade granola bars mare a perfect snack any time of day. And they are so much tastier, healthier, and cheaper than the ones in a box.

If you’ve ever wondered about how to make granola bars – I’m here to tell you that it’s really easy and hope you decide to give it a try.

 

Granola Bars

Great Granola Bars Recipe

Prep Time: 20 minutes
Bake Time: 30 minutes
Makes: 12 bars

Ingredients

2 cups old-fashioned rolled oats
1 cup sliced almonds
1 cup shredded coconut, loosely packed
½ cup toasted wheat germ
3 tablespoons vegetable oil
2/3 cup real maple syrup or honey
1/4 cup light brown sugar, lightly packed
1 ½ teaspoons pure vanilla extract
¼ teaspoon salt
½ cup dried cranberries
½ cup chopped dried apricots
½ cup chopped pitted dates

Directions

Preheat the oven to 350 degrees. Line a 9-inch square baking pan with foil and spray the foil with nonstick cooking spray and pull out a cookie sheet.

Toss the rolled oats, almonds, and coconut together on the cookie sheet and bake for 10 to 12 minutes, stirring occasionally, until lightly browned.

Transfer the mixture to a large mixing bowl and stir in the wheat germ.

Reduce the oven temperature to 300 degrees.

Place the oil, maple syrup, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oat mixture.

Add the cranberries, apricots and dates and stir well.

Pour the mixture into the prepared pan. Wet your fingers firmly press the mixture evenly into the pan.

Bake for 20 to 25 minutes, until light golden brown.

Cool for at least 2 to 3 hours before cutting into bars.

Nutritional Estimates Per Serving (1 bar): 253 calories, 11 g fat, 36 g carbohydrate, 5 g protein, 5 g fiber and 7 WW Points+

My cooking notes and use what you have variations:

  • This recipe can be modified in dozens of ways to suit your tastes. I am not a huge honey fan so I always make them with maple syrup.  But feel free to use honey or a combination of maple syrup and honey if you like.
  • Use the kinds of dried fruit and nuts you like best or have available.
  • Ground flaxseed can be used in place of the wheat germ
