This rich and creamy slow cooker chocolate rice pudding was adapted from one from Nigella Lawson.
3 tablespoons cocoa
4 tablespoons water
½ cup short grain rice (arborio or calrose)
4 cups skim milk (I used a combination of almond milk and skim evaporated milk)
½ cup sugar
Ideal Slow Cooker Size: 1-1/2 Quart
Grease the inside of the slow cooker.
Stir together the cocoa and water in the slow cooker. Then whisk in the milk, sugar and rice. Cook on Low for 4 to 6 hours until the rice is tender and mixture is thick. (If you can, give it a stir every hour or so)
