Slow Cooker Chocolate Rice Pudding

This rich and creamy slow cooker chocolate rice pudding was adapted from one from Nigella Lawson.
  • 3 tablespoons cocoa
  • 4 tablespoons water
  • ½ cup short grain rice (arborio or calrose)
  • 4 cups skim milk (I used a combination of almond milk and skim evaporated milk)
  • ½ cup sugar
  1. Ideal Slow Cooker Size: 1-1/2 Quart
  2. Grease the inside of the slow cooker.
  3. Stir together the cocoa and water in the slow cooker. Then whisk in the milk, sugar and rice.  Cook on Low for 4 to 6 hours until the rice is tender and mixture is thick.  (If you can, give it a stir every hour or so)
