Crock Pot Chocolate Rice Pudding

Super Simple 2-Ingredient Low Fat, Vegan Crock Pot Chocolate Rice Pudding is surprisingly creamy and delicious. It's not too sweet with a light chocolate flavor.
  • ⅓ cup short grain white rice (such as arborio)
  • 3 cups sweetened chocolate-flavored almond milk
  1. Called for ¼ cup chocolate hazelnut spread but I couldn't really taste it so it definitely wasn't worth the calories!
  2. Came out with light chocolate flavor. Not too sweet Creamy. Think it would work as breakfast, snack or dessert!
  3. Ideal slow cooker size: 1-1/2 to 2-Quart
  4. Grease the slow cooker insert.
  5. Combine the rice and almond milk in the slow cooker. Stir well. Cover and cook on HIGH for 2-1/2 to 3 hours or on LOW for 4 to 6 hours or until the rice is very tender and pudding is creamy. (If you are able, give the pudding a quick stir every hour or so.)
  6. Stir well.
  7. Serve warm or chilled.

For a richer chocolate flavor next time, try adding ¼ cup chocolate chips and/ 1 tablespoon unsweetened cocoa powder and 2 tablespoons sugar.
