 Corn Salad T his simple corn salad is a wonderful way to take advantage of the delicious fresh corn flooding the markets at this time of year. The corn looked so fresh and delicious when I shopped Sunday morning I ended up buying way more than I needed and have been looking for ways to use it ever since. We’ve enjoyed corn fritters, corn chowder and this delicious simple summer corn salad that can be tossed together in one bowl.

Pasta Salad Recipe

Summer Pasta SaladThis is a tasty pasta salad recipe perfect for hot summer evenings or toting to picnics and potlucks. It makes a big batch of pasta salad that keeps well in the refrigerator for several days.

I love it because it is full of tasty, colorful vegetables - red and green bell peppers, cherry tomatoes, cucumber, marinated artichoke hearts, kalamata olives - and dressed with a tangy vinaigrette.

Greek Potato Salad Recipe

Greek Potato SaladI love potato salad and always seem to be experimenting with variations.

Growing up Mom only ever made potato salad one way - with lots of mayonnaise.

We liked it.

While I still love creamy potato salads, these days I prefer French style potato salads dressed with vinaigrette instead of mayonnaise.

The first potato salad sans mayo I ever made was called Greek Potato Salad. I think it came from one of Susan Branch’s beautifully illustrated cookbooks, possibly Heart of the Home, but I can’t be sure since many of my cookbooks, including that one, are in Wisconsin while I’m here in Phoenix. Is there such a thing as cookbook separation anxiety? If there is, I’ve got it.

Be forewarned, this potato salad recipe will only work for people who like feta cheese. If you don’t, you will probably have a similar reaction to the one my husband had when he tasted it - yuck!

Simple Mango Salsa Recipe

Mango SalsaWe’ve been trying to eat more salmon these days since all of its healthy omega 3 fats are so good for us. To prevent boredom from sneaking in I’m always on the lookout for new ways to season or sauce our salmon.

Recently this quick and easy mango salsa recipe caught my eye so I decided to give it a try. It was the perfect tasty topping for grilled salmon, with its beautiful peach and green hues. I think it would be great on grilled chicken and any grilled or roasted white fish like halibut or tilapia too. Fish tacos, anyone?

This salsa can be stirred together right before dinner or made a few hours ahead and stored in the fridge. It will last a day or two in the fridge but really tastes best the day it is made.

Fruit ParfaitAs temperatures continue to rise well into the hundreds here in Phoenix, my interest in refreshing easy breakfast recipes perfect for summer continues. I’m still enjoying the muesli recipes very much. The trick is remembering to assemble the muesli before bed, something that hasn’t become a habit yet.

Mornings I realize I forgot to stir together my oats, yogurt, fruit and nuts, I often turn to another of those quick easy breakfast recipes that is especially perfect for summer: smoothies.

Breakfast Smoothies are a delicious way to get your day started on a healthy note. Sometimes I want something a little more substantial than breakfast in a glass, but nothing too heavy. What then? How about a breakfast fruit parfait? With a variety of tasty fruits widely available and my love of yogurt, nuts, flax, and crunchy cereal, a layered parfait seems like another easy breakfast recipes winner for summer.

Easy Breakfast Recipes for Summer - Muesli

Breakfast, the most important meal of the day. How many times have you heard the refrain?

It’s true for me. The right breakfast fuels me until lunch. The wrong breakfast — one with too much sugar and processed carbs — sets me up for a craving and binging roller coaster ride I’d just as soon avoid. Skipping breakfast produces a similar result — overeating whatever is readily available (usually something less than healthy) to quell my excessive appetite.

I love breakfast and have learned through lots of trial and error that the best one for me includes some combination of complex carbohydrates, protein, and healthy fat. There are plenty of easy breakfast recipes calling for oatmeal, fruit, yogurt, eggs, cheese, and veggies out there.

Summer can be a bit of a breakfast challenge, especially if you live in the desert like I do. My appetite whithers, but fruit alone isn’t enough to sustain me. Just thinking about breakfast foods that work in the warm months — steamy oatmeal with fruit, crustless quiche, veggie and cheese omelets — weighs me down.

There are many wonderful easy breakfast recipes perfect for summer — cool fruit smoothies, refreshing fruit parfaits, good for you homemade granola, light and healthy muffins, breakfast pizzas, and my favorite of the moment, muesli.

Muesli, combination of soaked grains, nuts, dried fruit and yogurt makes a perfect warm weather breakfast. It’s one of my current favorite easy breakfast recipes for summer. Just stir it up the night before and breakfast will be waiting for you in the fridge the next morning.

Tomatoes

Here’s a quick easy dinner recipe that requires only minimal cooking — just boiling pasta — and is ready in twenty minutes or less. I made it for dinner last week and everyone agreed that it’s a tasty creamy keeper! I used canned diced tomatoes but can’t wait to try it again with fresh when their in season.

When the weather turns hot I love to start the day with a healthy smoothie. It’s a simple way to get the day started in a cool refreshing way while providing a delicious source of healthy protein, fiber and phytonutrients. You can use the basic smoothie recipe as a template from which to create your own delicious variations. And smoothies just aren’t for breakfast - they make a perfect light summer lunch or mid afternoon pick me up too.

Simple Salad: Shredded Romaine with Dill

T his simple salad has become a recent favorite around our house. I can’t seem to get enough since first making it at The Conscious Gourmet Cooking Retreat I attended in Sedona with my sister last month. All of the food was delicious, but this was a revelation — how can something so simple be so good?

With just three ingredients — romaine, dill, and scallions — and a simple vinaigrette, I find myself turning to it regularly.
