Simple Recipe For Tuna Casserole

Easy Tuna Casserole

Trying to come up with an idea for dinner that wouldn’t require a trip to the market, tuna casserole suddenly popped into my head.

With a quick check of the fridge and pantry, I realized, that I did indeed have the ingredients for tuna casserole - tuna, small pasta shells, an onion, broccoli, peas, cream of mushroom soup, milk, cheese, and potato chips.

This is a great easy recipe for those times you want to keep things quick and simple. I love a casserole’s make now, bake later versatility. You can mix it together when you have a few minutes to spare, place it in the fridge, and just pop it into a preheated oven at dinner time. While the casserole bakes you can prepare a quick salad, enjoy a glass of wine, or sneak in a few minutes of exercise.

After checking with several cookbooks this is the simple recipe for tuna casserole we’ll be having for dinner tonight. It’s really just a jazzed up version of The Classic Tuna Noodle Casserole that appears on the back of the Campbells Cream of Celery Soup Can.

Meatloaf and Green Salad

I love meatloaf. It reminds me of mom and home and simpler times.  It’s comfort food. 

Meatloaf is quick and easy to make - just mix a few ingredients in a bowl, turn them into a pan and bake for an hour or so. It’s quick, easy, and satisfying.

I’m always on the lookout for quick and easy meatloaf recipes. It seems like I never make the same meatloaf twice - always experimenting, tweaking and trying new flavor combinations. For the past several years I’ve been making most of my meatloaf recipes with ground turkey - it is lighter, less rich, less heavy. Sometimes I use 2 parts ground turkey and 1 part turkey sausage for a little extra zing.

Here’s a basic meatloaf recipe for classic meatloaf with several ideas for optional additions.  There are also several variations so it’s like getting many quick and easy meatloaf recipes in one.  Experiment and find the best meatloaf recipe for you.

I tried another great recipe from this month’s issue of Real Simple last night–turkey and roasted red pepper meat loaf. It was delicious; by far the best turkey meat loaf recipe I have found to date and pretty straight forward–ground turkey, parmesan, egg, bread crumbs, mustard, parsley and a small jar of roasted red peppers. I added a teaspoon of thyme for good measure. Chopped fresh basil would be a nice variation that I plan to try next time.  It was a little salty and will cut back on the parmesan a bit next time too.

I served it with a simple mixed green salad with balsamic vinaigrette, as well as roasted onions, potatoes and sweet potatoes. My guys were in heaven, giving dinner two thumbs up. This one’s going to the top of my meat loaf file. Try it for yourself and let me know what you think.

Shrimp and Chicken Sausage Jambalaya Recipe

Seeking something a little out of the ordinary, yet relatively easy for dinner last night, I came up with this shrimp & chicken sausage jambalaya. It’s based on a recipe I came across in a new magazine called Clean Eating.

I used shrimp and sausage since that was what I had in the freezer. Always looking for ways to increase our veggie count, I added chopped celery and sliced fennel to the original version’s call for onion and pepper.

While not a traditional jambalaya ingredient, the fennel worked nicely. Served with a caesar salad, it was a big hit with both my husband and stepson.
