Happy Sunday!

I hope you had a wonderful week. How quickly they are flying by! It was a great one for me with lots of time for yoga, walking, cookbook reading, and lunching with Mom. And lots less time in the kitchen, which can be a blessing this time of year when just the thought of turning on the stove can cause me to break into a sweat.

And I have Mom to thank. She spent last Sunday cooking like a wild woman and then shared the delicious results – roasted turkey breast, gravy, stuffing, baked ravioli alfredo, and kale, sausage, white bean soup – with me. We’ve been enjoying the variety for dinner all week. The most I’ve had to do is make a vegetable or salad. Talk about a treat!

I can’t think of a better gift than one of homemade food, can you?

Today I’m sharing a few Weight Watcher’s friendly summer recipes I bookmarked this week for sandwiches, drinks, desserts, coffeecake, muffins and more…

Applesauce Oatmeal Muffins – combining two of my favorite healthy ingredients – oatmeal and applesauce to make moist, filling and incredibly delicious muffins are a wonderful breakfast on the go or a healthy snack from LaaLoosh.

Blueberry Jam Buttermilk Coffeecake - I can’t get enough blueberries and blueberry recipes this time of year. This coffeecake from Averie Cooks looks like a winner. Again, it doesn’t include nutritional details, but looks pretty light as coffee cakes go.

Blueberry Oatmeal Power Muffins - chock full of good for you things including oatmeal, blueberries, honey, whole wheat flour and Greek yogurt, these muffins, though not as indulgent as Averie’s coffee cake above, would make a healthy way to begin the day. Found a See Aimee Cook.

Lemon Blueberry Oat Muffins – another light and healthy blueberry muffin with just 166 calories and 4 Weight Watchers PointsPlus found at Taste of Home.

Chipotle Lobster and Avocado Wraps – Recently back from Maine, where we indulged in lobster several times, Gina from Skinny Taste’s recipe for a fancified version of the lobster roll: chipotle lobster salad with avocado, scallions, cilantro and lettuce on a whole wheat wrap really grabbed my attention.

Stuffed Pepperoni Pizza Melt - a low in calories, big on taste panini with just 6 Weight Watches PointsPlus from Nancy at Skinny Kitchen you may want to try the next time you’re craving pepperoni pizza.

Orange Thyme Grilled Shrimp in Foil - Here’s a simple and easy dinner perfect for any night of the week that cooks in foil on the grill from Yummy Healthy Easy.

Watermelon Aqua Fresca – a refreshing, thirst-quenching summer beverage with just 2 Weight Watchers PointsPlus for watermelon lovers from Emily Bites.

Citrus Fruit Salad – an easy, healthy and delicious combination of summer fruit tossed with orange juice makes a perfect Weight Watchers friendly breakfast, side dish or dessert option from Six Sisters Stuff.

Dreamy Creamsicle Pie – from Spend with Pennies looks so light and refreshing, especially if you love the flavor combination of orange and cream. No bake pies like this are a natural choice for summer. Unfortunately, the nutrition information isn’t included but it would be easy enough to figure out with Recipe Builder.

Chocolate and Vanilla Banana Cream Parfaits – another easy no bake creamy dessert combining some of my favorite flavors: vanilla, chocolate and bananas from Weight Watchers.

Almond Blueberry Biscotti from MJ and Hungry Man are the perfect recipe for testing out some of the dried wild blueberries I brought back with me from Maine!

Dessert on the Campfire Banana Boats – A clever campfire dessert combining banana, chocolate chips and mini marshmallows from The Taylor House.

    Nothing beats home cooked meals by our own mothers, wouldn’t you agree? It’s been a while since my mom cooked like a “wild woman” for me, and I sure do miss it terribly. Thank you so much for sharing my biscotti!
